- 3 cups pinto beans (2 cans, drained)
- 8 oz bacon
- 1 onion chopped
- 2 teaspoons mustard
- 1 cup ketchup
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
Cook the bacon until crisp and drain on paper towels. Save that yummy bacon fat in the pan.
Sauté the onions in the bacon grease until they're soft and translucent.
Mix beans and sauce by combining beans, ketchup, brown sugar, mustard, salt, and pepper in a bowl.
Add bacon and onions to your bean mixture and stir well to combine all ingredients.
Transfer to a pan that's safe for your smoker – aluminum foil or cast iron work great.
