Ingredients
  

  • 3 cups pinto beans (2 cans, drained)
  • 8 oz bacon
  • 1 onion chopped
  • 2 teaspoons mustard
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • Cook the bacon until crisp and drain on paper towels. Save that yummy bacon fat in the pan.
  • Sauté the onions in the bacon grease until they're soft and translucent.
  • Mix beans and sauce by combining beans, ketchup, brown sugar, mustard, salt, and pepper in a bowl.
  • Add bacon and onions to your bean mixture and stir well to combine all ingredients.
  • Transfer to a pan that's safe for your smoker – aluminum foil or cast iron work great.
  • Smoke at 225°F for 1.5 to 2 hours until hot and full of smoky flavor.

Notes

  • Stir once halfway through smoking for best flavor distribution.
  • Try different wood chips like hickory or apple for varied smoke flavors.
  • Add jalapeños with the onions if you like a spicy kick.
  • These taste even better the next day after flavors meld overnight.
  • For a vegetarian version, skip bacon and use olive oil instead.
