Ingredients
  

  • 2 lbs sweet potatoes (peeled and cut into 1-inch chunks)
  • 3 tbsp butter
  • ¼ cup low-fat milk (more if needed)
  • ½ tsp Kosher salt to taste
  • ¼ tsp black pepper to taste
  • ¼ tsp ground cinnamon
  • Fresh thyme sprigs (for garnish)

Instructions
 

  • Boil the potatoes: Place 2 lbs of sweet potato chunks in a large pot with cold, salted water.
  • Cook until tender: Bring the water to a boil and cook for 15-20 minutes, or until very soft.
  • Drain the potatoes: Pour the cooked potatoes into a colander and let them steam dry for a minute.
  • Mash the potatoes: Return the potatoes to the pot and mash them well with a potato masher.
  • Mix in ingredients: Add 3 tbsp butter, ¼ cup milk, salt, pepper, and cinnamon. Stir until smooth.
  • Serve the dish: Taste and add more salt if needed. Serve warm with fresh thyme on top.

Notes

  • Do not cut your potato chunks too big, or they will take longer to cook.
  • Warming the milk before adding it can make your potatoes even creamier.
  • Be sure to drain all the water well to avoid a watery final dish.
  • For a richer taste, you can use whole milk instead of low-fat milk.
  • These potatoes taste even better the next day after the flavors have mixed.
  • A little cinnamon goes a long way, so start with just a small amount.
