- 2 lbs sweet potatoes (peeled and cut into 1-inch chunks)
- 3 tbsp butter
- ¼ cup low-fat milk (more if needed)
- ½ tsp Kosher salt to taste
- ¼ tsp black pepper to taste
- ¼ tsp ground cinnamon
- Fresh thyme sprigs (for garnish)
Boil the potatoes: Place 2 lbs of sweet potato chunks in a large pot with cold, salted water.
Cook until tender: Bring the water to a boil and cook for 15-20 minutes, or until very soft.
Drain the potatoes: Pour the cooked potatoes into a colander and let them steam dry for a minute.
Mash the potatoes: Return the potatoes to the pot and mash them well with a potato masher.
