Chocolate Covered Strawberries

Pretty chocolate covered strawberries with fresh berries dipped in yummy chocolate that are perfect for Valentine's Day or any special romantic day.

Ingredients
  

  • 12 large fresh strawberries, with stems
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • ½ cup white chocolate chips (optional)
  • ½ teaspoon coconut oil (for white chocolate)

Equipment

  • Double boiler or glass bowl
  • Baking Sheet
  • Parchment paper
  • Fork or dipping tool

Method
 

  1. Wash strawberries under cold water and dry them really well with paper towels so there's no water left on them at all.
  2. Put parchment paper on your baking sheet and set it aside so it's ready when you need it for your strawberries.
  3. Put semi-sweet chocolate chips and coconut oil in your double boiler on medium-low heat and stir until it's all melted and smooth.
  4. Hold each strawberry by the stem and dip it in the melted chocolate, and turn it to coat most of the berry.
  5. Let the extra chocolate drip off, and then put the strawberry on the parchment paper with space between each one so they don't touch.
  6. Put the baking sheet in the fridge for 15 minutes so the chocolate gets hard and shiny and looks really pretty on the berries.
  7. If you want, melt white chocolate chips with coconut oil and use a fork to make pretty drizzle lines on the strawberries.
  8. Put them back in the fridge for 10 minutes to make the white chocolate hard before you serve them to everyone.

Notes

  • Room temperature strawberries work best so the chocolate sticks better and coats evenly all over each berry.
  • Work fast when dipping because chocolate starts getting hard really quickly once you take it off the heat.
  • Keep finished strawberries in the fridge and eat them in 24-48 hours while they're still fresh and tasty.
  • Wash your berries a few hours before you dip them and make sure they're totally dry first.
  • Use really good chocolate with more cocoa in it so your strawberries taste better and look prettier.
